First things first, it's time to gather all the delicious ingredients for these grain-free goodies. Here's what you'll need: almond flour (1 cup), coconut flour (1/4 cup), grain-free granola (1/2 cup), coconut oil (1/4 cup, melted), maple syrup (1/4 cup), vanilla extract (1 teaspoon), baking powder (1/2 teaspoon), and a pinch of salt.
In a mixing bowl, combine the almond flour, coconut flour, grain-free granola, baking powder, and salt. Give it a good stir to ensure all the dry ingredients are evenly mixed together. This is the base of our grain-free goodness!
Once the dry ingredients are mixed, it's time to add the wet ingredients. Pour in the melted coconut oil, maple syrup, and vanilla extract. Stir everything together until a sticky dough forms. If the dough seems too dry, you can add a splash of almond milk to bring it together.
Now that the dough is ready, cover the bowl with plastic wrap and pop it in the refrigerator to chill for about 30 minutes. This will help the dough firm up and make it easier to shape into cookies. While you wait, you can do a little dance or prepare your taste buds for the cookie goodness.
While the dough is chilling, preheat your oven to 350°F (175°C). This will ensure your cookies bake to perfection and have that wonderful golden brown color we all love.
After chilling, take out the dough and grab about a tablespoon of it at a time. Roll it into a ball and then flatten it slightly to create a cookie shape. Place each cookie onto a baking sheet lined with parchment paper, leaving a little space between them. You can also use a cookie scoop if you prefer perfectly shaped cookies.
Pop the baking sheet into the preheated oven and let the cookies bake for about 12-15 minutes, or until they turn golden brown around the edges. Keep an eye on them, as they can quickly go from golden to burnt. We want delicious cookies, not charcoal!
Once the cookies are done baking, resist the temptation to devour them right away. Let them cool on the baking sheet for a few minutes, and then transfer them to a wire rack to cool completely. If you have the willpower to wait, that is. If not, go ahead and indulge in one or two while they're still warm and melty. No judgment here!
