Sprinkle the gelatin over the cream mixture and whisk it gently. Let it sit for about 5 minutes to allow the gelatin to bloom.
Place the saucepan back over low heat and stir the mixture until the gelatin is completely dissolved. This should take about 5 minutes. Remove from heat and stir in the vanilla extract.
Carefully pour the mixture into individual ramekins or molds. You can lightly grease them with a neutral-flavored oil to ensure easy removal later on.
Place the molds in the refrigerator and let them chill for at least 4 hours, or preferably overnight. This will allow the Panna Cotta to set and achieve its perfect texture.
Once the Panna Cotta is fully set, remove the molds from the refrigerator. To serve, gently run a knife along the edges of the molds and invert them onto serving plates. You can enjoy them as they are or dress them up with fresh berries, caramel sauce, or a sprinkle of cocoa powder.
