In a mixing bowl, combine 1 cup of ricotta cheese, 1/2 cup of powdered sugar, and 1/2 teaspoon of vanilla extract. Stir until smooth and creamy.
In a large bowl, whisk together 1 1/2 cups of all-purpose flour, 2 tablespoons of granulated sugar, and a pinch of salt. Cut in 2 tablespoons of butter until the mixture resembles coarse crumbs. Beat one egg and mix it into the dough. Knead the dough until smooth, then wrap it in plastic wrap and let it chill in the fridge for 30 minutes.

Fry the shells until golden brown, about 2-3 minutes per side. Use tongs to carefully remove the shells from the oil and let them cool on a wire rack.
Once the shells have cooled, gently remove them from the tubes. Use a piping bag or a spoon to fill each shell with the ricotta filling.
