Gather 2 lbs of boneless chicken thighs, 2 onions, 4 cloves of garlic, 2 carrots, 1 sweet potato, 1 can of chickpeas, 1 lemon, 1 cup of dried apricots, 1 cup of green olives, 2 tablespoons of olive oil, 2 tablespoons of honey, 2 teaspoons of ground cumin, 1 teaspoon of ground cinnamon, 1 teaspoon of ground ginger, 1 teaspoon of paprika, salt, and pepper.
In a bowl, combine the chicken thighs, diced onions, minced garlic, cumin, cinnamon, ginger, paprika, salt, and pepper. Squeeze the juice of half a lemon over the mixture and let it marinate for at least 30 minutes, or overnight for an extra flavor punch.
Heat the olive oil in a large pot or tagine over medium heat. Add the marinated chicken and cook until browned on all sides. Remove the chicken from the pot and set it aside. In the same pot, add the diced carrots, sweet potato, drained chickpeas, apricots, and olives. Stir in the honey and pour in 1 cup of water. Bring the mixture to a boil.
Reduce the heat to low and return the chicken to the pot. Cover with a lid and let it simmer for about 1 hour, or until the chicken is tender and the flavors have melded together beautifully. Squeeze the juice of the remaining half lemon over the dish for a tangy twist!
