Pour 2 cups of milk into a saucepan and heat it gently over low heat. Add 1-2 tablespoons of dried culinary lavender to the milk, stirring gently. Allow the milk to infuse for 10-15 minutes, maintaining a low heat.
Once the milk has infused with a heavenly aroma, strain it into a bowl or jug to remove the lavender buds. Press down on the lavender with a spoon to extract all the infused milk goodness. Discard the lavender buds.
Add 4 tablespoons of honey or sweetener of your choice to the lavender-infused milk. Stir well to dissolve the sweetener and ensure a balanced sweetness throughout the lassi.
In a blender, combine 2 cups of yogurt, the lavender-infused milk, and a handful of ice cubes. Blend until smooth and creamy, ensuring all the ingredients are well-incorporated.
Pour half of the blended lassi into a glass, leaving some space at the top. Add a few drops of purple food coloring to the remaining lassi in the blender and blend briefly to create a lavender hue. Carefully pour the lavender-colored lassi on top of the white layer, creating a beautiful layered effect.
For an extra touch of elegance, garnish your layered lavender lassi with a sprinkle of dried culinary lavender flowers. Serve chilled and marvel at its beauty before enjoying each creamy, dreamy sip!
