Make sure you have all the necessary ingredients and utensils within reach. You don't want to have to rush out of the kitchen halfway through.
Preheat your oven to 375°F. Grease individual ramekins with butter and lightly dust with grated Parmesan cheese.
In a skillet, sauté your choice of veggies (such as spinach, mushrooms, or bell peppers) with a bit of olive oil. Season with salt, pepper, and any herbs or spices you desire. Set aside to cool slightly.
Separate six eggs, placing the whites in a large bowl. Whip the egg whites until they reach stiff peaks, like a mini egg mountain. In a separate bowl, whisk the egg yolks until smooth. Gently fold the yolks into the egg white mixture.
Carefully fold the sautéed veggies and your choice of cheese (gruyere or cheddar work wonderfully) into the egg mixture. Spoon the mixture into the prepared ramekins, filling them about 3/4 full.
Place the ramekins on a baking sheet and bake in the preheated oven for approximately 15-20 minutes, or until the soufflés are puffed up and golden. Serve immediately with a sprinkle of fresh herbs and a side of love!
