Gather all the necessary ingredients for these muffins: - 2 cups all-purpose flour - 1 cup granulated sugar - 2 teaspoons baking powder - 1/2 teaspoon baking soda - 1/2 teaspoon salt - 1/2 cup unsalted butter, melted - 3/4 cup plain Greek yogurt - 1/4 cup fresh basil leaves, finely chopped - 1/4 cup blueberries - 2 large eggs - 1/2 cup sparkling wine (prosecco or champagne will work too) - 1 teaspoon vanilla extract
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Make sure everything is well combined so you don't end up with clumps of flour in your muffins.
In a separate bowl, whisk together the melted butter, Greek yogurt, basil, blueberries, eggs, sparkling wine, and vanilla extract. Mix until everything is well incorporated.
Gently add the wet ingredients to the dry ingredients, using a spatula or wooden spoon to fold them together. Be careful not to overmix, as that can lead to dense muffins. It's okay if there are a few lumps - they will disappear during baking.
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray. This will prevent the muffins from sticking and make cleanup a breeze.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 of the way full. If you want larger muffins, you can fill them a bit more, but keep in mind that the baking time may need to be adjusted.
