Indulge in bite-sized bliss with our Mini Muffin Medley recipe. Bursting with blueberries and rich chocolate, they're a delightful treat for any occasion.
Take note
Be careful not to overmix the batter, as this can result in tough muffins. Also, resist the temptation to eat them all at once - they're mini, but they're mighty!
Preheat your oven to 375°F (190°C) and line a mini muffin tin with baking cups.
In a mixing bowl, whisk together 1 ½ cups (180g) all-purpose flour, ¾ cup (150g) granulated sugar, ¼ cup (30g) unsweetened cocoa powder, 1 ½ teaspoons baking powder, and ½ teaspoon salt.
In a separate bowl, beat together 2 large eggs, ½ cup (120ml) milk, ½ cup (120ml) vegetable oil, and 1 teaspoon vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix - a few lumps are okay!
Gently fold in 1 cup (150g) fresh blueberries and ½ cup (85g) chocolate chips. The batter will be thick and lumpy, but that's what makes these muffins so delicious!
Using a spoon or cookie scoop, divide the batter evenly among the lined muffin cups. Each cup should be about ¾ full.
Pop the muffin tin into the preheated oven and bake for approximately 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the tin and let them cool on a wire rack. Once cooled, dig in and savor the mini muffin medley of blueberries and chocolate! They're perfect for snacking anytime.
