Take note
Be cautious when working with hot ingredients and remember to use oven mitts to avoid burns.
Turn the oven on to 425°F (220°C) and let it preheat while you prepare the other ingredients.
Take a small ramekin and generously butter the inside. Dust it with flour, shaking off any excess. Repeat this step for the remaining ramekins.
In a microwave-safe bowl, combine 4 ounces of dark chocolate and 1/2 cup (1 stick) of unsalted butter. Heat in the microwave in 20-second intervals, stirring in between, until the mixture is smooth and fully melted.
In a separate bowl, whisk together 2 eggs, 2 egg yolks, 1/4 cup of granulated sugar, and 1 teaspoon of vanilla extract until well combined. Gradually pour in the melted chocolate and butter mixture, stirring continuously.
Sift in 1/4 cup of all-purpose flour, 2 tablespoons of cocoa powder, and a pinch of salt. Gently fold the dry ingredients into the batter until just combined.
Divide the batter evenly among the prepared ramekins, filling them about 3/4 of the way full. Place the ramekins on a baking sheet for easy handling.
Carefully place the baking sheet with the ramekins into the preheated oven. Bake for 12-14 minutes, or until the edges are set but the center is still slightly jiggly.
Remove the ramekins from the oven using oven mitts. Let them cool for a minute or two, then gently run a knife along the edges to loosen the cakes. Invert each ramekin onto a serving plate, tap firmly on the bottom to release the cakes. They should easily slide out, revealing a molten lava center. Serve immediately and enjoy the ooey-gooey goodness!
