To make your chocolate soufflé, you'll need: 4 ounces of dark chocolate, 1/4 cup of unsalted butter, 1/4 cup of all-purpose flour, 1/2 cup of granulated sugar, 1 cup of whole milk, 4 large eggs (separated), and a pinch of salt.
Preheat your oven to 375°F (190°C) and butter the insides of 4 individual ramekins. Dust the buttered ramekins with granulated sugar, tapping out any excess.
In a microwave-safe bowl, melt the dark chocolate and unsalted butter together in 30-second intervals, stirring well after each interval. Set aside to cool slightly.
In a medium saucepan, whisk together the all-purpose flour, granulated sugar, and salt. Gradually whisk in the whole milk until smooth. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat and let it cool for a few minutes.
Add the melted chocolate mixture to the saucepan with the batter and whisk until well combined. Then, whisk in the egg yolks one at a time, ensuring each yolk is fully incorporated before adding the next one.
In a separate bowl, beat the egg whites using an electric mixer until stiff peaks form. This will take a few minutes, so feel free to bop along to your favorite tunes!
Gently fold one-third of the beaten egg whites into the chocolate batter until just combined. Then, add the remaining egg whites and carefully fold them in, being sure not to deflate the mixture. Divide the batter equally among the prepared ramekins.
Place the ramekins on a baking sheet and bake in the preheated oven for about 12-15 minutes until the soufflés rise and develop a beautiful golden crust. Don't open the oven during baking! Once done, remove from the oven, dust with powdered sugar, and serve immediately. Enjoy the magic before it deflates!
