Before we dive into the baking fun, let's gather all the ingredients you'll need. You'll need 1/2 cup of whole wheat flour, 1/4 cup of unsweetened cocoa powder, 1/2 cup of unsweetened applesauce, 2 tablespoons of pure maple syrup, 1/4 cup of dark chocolate chips, 2 tablespoons of coconut oil, 1/4 teaspoon of baking powder, and a pinch of salt.
Preheat your oven to 350°F (175°C). Lightly grease four ramekins or oven-safe cups with a touch of coconut oil or cooking spray. Place the ramekins on a baking sheet for easy handling.
In a medium-sized bowl, whisk together the whole wheat flour, unsweetened cocoa powder, baking powder, and salt. Make sure all the ingredients are well combined.
In a separate bowl, combine the unsweetened applesauce, pure maple syrup, and melted coconut oil. Stir until the ingredients are fully blended. If the coconut oil starts to solidify, gently warm the mixture in the microwave for a few seconds.
Pour the wet ingredients into the bowl with the dry ingredients. Use a spatula to gently fold and mix everything together until you have a smooth, thick batter.
Fold in the dark chocolate chips into the batter. Make sure they are evenly distributed throughout the mixture. This is where the delicious molten lava part comes into play!
Divide the batter equally among the prepared ramekins. Make sure to leave a little room at the top as the cakes will rise slightly.
Place the baking sheet with the ramekins into the preheated oven. Bake for about 15-18 minutes or until the edges of the cakes are set and the centers are slightly gooey.
Remove the ramekins from the oven using oven mitts or towels. Let them cool for a minute or two, then carefully run a knife around the edges of each cake to loosen them. Invert the ramekins onto individual serving plates, tap the bottoms gently, and lift the ramekins to reveal the beautiful lava cakes. Serve warm and enjoy!
