Before we can dive into pancake heaven, we need to gather our ingredients. You'll need: 2 cups of all-purpose flour, 2 tablespoons of sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, 2 cups of buttermilk, 2 large eggs, 2 tablespoons of melted butter, and 1 teaspoon of vanilla extract.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract. Once both mixtures are well combined, pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix - a few lumps are okay!
Heat a lightly greased griddle or non-stick skillet over medium heat. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes, until golden brown and cooked through. Repeat with the remaining batter.
