Take a bag of Cap'n Crunch cereal and pour it into a sealable plastic bag. Use a rolling pin or any other kitchen tool (hammer, anyone?) to crush the cereal until you have small, crunchy pieces. Don't worry if there are a few larger chunks - they'll add extra crunch!
In a shallow bowl, whisk together 2 eggs, 1/2 cup of milk, and 1 teaspoon of vanilla extract. Make sure the eggs are well beaten and the mixture is fully combined. This will be the delicious batter that brings the French toast to life!
Heat a non-stick skillet or griddle over medium heat. Dip a slice of bread into the batter, making sure to coat both sides evenly. Allow any excess batter to drip off before moving to the next step. Repeat this step with as many slices of bread as you desire.
