Gather all the necessary ingredients: 2 cups of mushrooms (sliced), 2 carrots (peeled and chopped), 1 onion (diced), 3 garlic cloves (minced), 2 tablespoons of tomato paste, 1 cup of vegetable broth, 1 cup of red wine, 2 tablespoons of soy sauce, 1 teaspoon of dried thyme, 1 bay leaf, salt, and pepper to taste.
In a large pot, heat some olive oil over medium heat. Add the sliced mushrooms, chopped carrots, diced onion, and minced garlic. Sauté for about 5 minutes until the veggies start to soften and release their delicious aromas.
