In a mixing bowl, combine 2 cups of pre-cooked cornmeal, 1 1/2 cups of warm water, and 1/2 teaspoon of salt. Mix well until the dough is smooth and pliable.
Take a small portion of the dough and roll it into a ball. Flatten the ball gently to form a thick disc, around 1/2 inch thick. Repeat the process with the remaining dough.
Take one of the flattened dough discs and place a generous amount of your favorite melting cheese in the center. Fold the edges of the disc over the cheese to seal it completely.
Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a small amount of oil. Cook the stuffed arepas for about 4-5 minutes on each side, or until they develop a golden crust.
Remove the cheesy stuffed arepas from the skillet and let them cool slightly. Cut them in half and savor the melted cheese oozing out. Serve hot and enjoy!
