In a large bowl, whisk together 1 ½ cups of all-purpose flour, 3 ½ teaspoons of baking powder, 1 tablespoon of sugar, and ½ teaspoon of salt. In a separate bowl, beat 1 ¼ cups of milk, 1 egg, and 3 tablespoons of melted butter. Then, pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, a few lumps are okay!
Place a non-stick griddle or pan over medium heat. If you want to test if the pan is hot enough, sprinkle a few drops of water on the surface. If they sizzle and evaporate, you're good to go!
Using a measuring cup or ladle, pour about ¼ cup of batter onto the griddle for each pancake. You can make them as big or as small as you like, but remember that bigger pancakes take longer to cook.
Let the pancakes cook until bubbles form on the surface, then carefully flip them with a spatula. Cook for another minute or so until golden brown on the other side. Repeat with the remaining batter, adding a little butter to the pan as needed. Just don't forget to sneak a pancake or two while cooking!
