Mixing the Dough

In a large mixing bowl, combine 2 cups of all-purpose flour and a pinch of salt. Make a well in the center and crack in 3 large eggs. Gently beat the eggs with a fork, gradually incorporating the flour until a shaggy dough forms. If the dough feels too dry, add a little water; if it's too sticky, add a touch more flour.

Kneading and Resting

Transfer the dough onto a lightly floured surface and knead it for about 10 minutes, or until it becomes smooth and elastic. This is a great opportunity to work out those arm muscles! Once the dough is nicely kneaded, cover it with a damp cloth and let it rest for at least 30 minutes. It needs some time to relax, just like you after a long day!

Rolling and Shaping

Divide the rested dough into manageable portions. Flatten one portion with your hands, then use a rolling pin to roll it out into a thin sheet. If you have a pasta machine, you can use that too. For fettuccine, roll the dough out until it's about 1/8 inch thick, then cut it into strips. For ravioli, roll the dough slightly thicker and use a ravioli cutter to make squares. Get creative with your shapes!

Cooking and Enjoying

Bring a large pot of salted water to a rolling boil. Carefully drop in your homemade fresh pasta and cook for about 2-3 minutes, or until al dente. Don't overcook it! Once it's done, drain the pasta and toss it with your favorite sauce. Top it off with some grated Parmesan cheese and a sprinkle of fresh herbs. Mangia, mangia!
