Take a trip down memory lane and recreate the classic Lentil Soup recipe that grandma used to make. A taste of love from the past.
Take note
Be prepared to experience an overwhelming sense of nostalgia and possibly shed some happy tears.
In a large bowl, soak 1 cup of dried lentils in water for about 1 hour. This will help soften them up and make them cook faster.
Dice 1 onion, 2 carrots, and 2 celery stalks. In a pot, heat 2 tablespoons of olive oil over medium heat and sauté the veggies until they turn tender and golden brown.
Mince 3 cloves of garlic and add them to the pot. Stir in 1 teaspoon of cumin, 1 teaspoon of paprika, and a pinch of red pepper flakes for a kick of heat. Let everything mingle for a minute or so.
Drain the soaked lentils and add them to the pot, along with 4 cups of vegetable or chicken broth. Bring it to a boil, then reduce the heat and let it simmer, covered, for about 20-25 minutes until the lentils are tender.
To complete the nostalgic experience, sprinkle in some salt and pepper to taste. Grandma always says a pinch of love is the secret ingredient, so don't skimp on that either! Let the soup simmer for another 5 minutes before serving.
Ladle the steaming lentil soup into bowls and garnish with some freshly chopped parsley. Close your eyes, take a spoonful, and let the flavors transport you back to your grandma's kitchen. Enjoy!
