To make this delicious twist on lentil soup, you'll need the following ingredients: - 1 cup of dried lentils - 1 large onion, chopped - 3 cloves of garlic, minced - 1 carrot, diced - 1 celery stalk, diced - 1 red bell pepper, diced - 1 tablespoon of olive oil - 4 cups of vegetable broth - 1 can of diced tomatoes - 1 teaspoon of cumin - 1 teaspoon of paprika - Salt and pepper to taste - Fresh parsley for garnish
Start by rinsing the dried lentils under cold water. Set them aside. Then, chop the onion, mince the garlic, dice the carrot, celery, and red bell pepper. Keep them handy as we'll be using them soon!
Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, diced carrot, celery, and red bell pepper. Sauté them until they're tender and fragrant, about 5 minutes.
