Be careful while handling lollipop sticks as they can be sharp. And remember, these lollipops are so delicious, they might disappear before you know it!
First things first, let's make sure we have everything we need. Grab 2 cups of fresh litchi pulp, 1/2 cup of powdered sugar, 1 teaspoon of lemon juice, and a handful of lollipop sticks.
In a bowl, mix the litchi pulp, powdered sugar, and lemon juice until well combined. Make sure there are no lumps in the mixture. Feel free to give it a taste and adjust the sweetness as desired.
Now, pour the litchi mixture into lollipop molds or small silicone cups. If you don't have molds, you can use an ice cube tray or even small paper cups. Insert a lollipop stick into each mold, making sure it's immersed halfway into the mixture.
Pop the lollipop molds into the freezer and let them set for at least 4 hours or until solid. Once frozen, remove the lollipops from the molds and voila! Your tasty Light Litchi Lollipops are ready to be devoured. Enjoy them straight away or store them in the freezer for a refreshing treat later!
