Collect the following items: lollipop sticks, candy molds, sugar, water, food coloring, flavoring (optional), and non-stick cooking spray (optional).
In a saucepan, combine 1 cup of sugar and 1/4 cup of water. Heat the mixture over medium heat until the sugar dissolves completely. Do not stir. Once the mixture reaches 300°F (150°C), remove it from the heat.
If desired, add a few drops of food coloring and flavoring to the sugar syrup. Stir gently to incorporate the color and flavor evenly.
Carefully pour the sugar syrup into the candy molds, filling them to the top. If desired, lightly spray the molds with non-stick cooking spray beforehand to ease the removal of the lollipops later.
Immediately place a lollipop stick into each mold, swirling it slightly to ensure it is fully coated with the syrup. Hold the sticks upright until the syrup cools and hardens.
Allow the lollipops to cool and harden completely at room temperature. This may take around 30 minutes to an hour, depending on the size of the lollipops.
Once the lollipops are completely set, gently pop them out of the candy molds. If they resist, give the mold a light tap on a flat surface to release them.
