First, gather all the ingredients you'll need: 2 cups of leftover mashed potatoes, 1/4 cup of all-purpose flour, 1/4 cup of grated Parmesan cheese, 2 tablespoons of chopped fresh chives, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/4 cup of milk, and 2 tablespoons of butter.
In a large bowl, combine the mashed potatoes, flour, Parmesan cheese, chives, garlic powder, salt, and black pepper. Mix everything together until well combined. If the mixture seems a bit dry, add a splash of milk to moisten it up.
Heat a large skillet or non-stick frying pan over medium heat. Melt the butter in the skillet, making sure to coat the entire surface.
Using a 1/4 cup measuring cup, scoop the mashed potato mixture onto the skillet, flattening it slightly with the back of the measuring cup. Cook for about 3-4 minutes on each side or until golden brown and crispy. You'll know they're ready when they're nice and golden!
Once cooked, transfer the mashed potato pancakes to a plate lined with paper towels to absorb any excess oil. Serve them hot and crispy with your favorite toppings, like sour cream or ketchup. These pancakes are so delicious, it's okay to devour them all!
