Take note
Caution: These chips are devilishly addictive! You might find yourself eating the entire batch in one sitting. Proceed with caution and have extra napkins at the ready.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Next, scrub the potatoes clean and pat them dry. Leave the skins on; that's where the flavor is!
Using a sharp knife or mandoline slicer, cut the potatoes into thin slices, about 1/8 inch thick. Try to get them as uniform as possible for even baking.
In a mixing bowl, combine sriracha sauce, olive oil, garlic powder, and a pinch of salt. Add the potato slices to the bowl and toss until they're evenly coated with the spicy goodness.
Arrange the coated potato slices in a single layer on the prepared baking sheet. Sprinkle them with a little extra salt if desired. Pop the tray into the preheated oven and bake for about 20 minutes, or until the chips are golden brown and crispy.
Once the chips are done, remove them from the oven and let them cool for a few minutes. Transfer them to a serving bowl and get ready to savor the smoky, spicy deliciousness of your homemade sriracha potato skin chips!
