In a mixing bowl, combine 2 cups of all-purpose flour, 1/4 cup of granulated sugar, 1 tablespoon of matcha powder, and a pinch of salt. Whisk the dry ingredients together until well combined.
Cut 1/2 cup of cold unsalted butter into small cubes. Add the butter to the dry ingredients and mix until it resembles coarse crumbs. In a separate bowl, dissolve 1 packet of active dry yeast in 1/2 cup of warm milk. Pour the yeast mixture into the flour mixture and stir until a soft dough forms.
Transfer the dough onto a lightly floured surface and knead it for about 5 minutes, or until smooth and elastic. Shape the dough into a ball and place it in a greased bowl. Cover the bowl with a damp cloth and let the dough rise for 1 hour, or until doubled in size.
Once the dough has risen, punch it down and transfer it to a lightly floured surface. Roll it out into a rectangle shape, about 1/4 inch thick.
Using a knife or pizza cutter, cut the dough into long strips. Take one strip and roll it into a tight coil, starting from one end. Place the coil in a greased muffin tin. Repeat this process with the remaining strips of dough.
Cover the muffin tin with a damp cloth and let the cruffins rise for another 30 minutes to an hour, or until they have puffed up nicely.
Preheat your oven to 375°F (190°C). Once preheated, bake the cruffins for 15-20 minutes, or until golden brown. Remove them from the oven and let them cool slightly. Dust with powdered sugar, if desired, and enjoy your delicious homemade matcha cruffins!
