In a bowl, combine 1 cup of finely chopped mixed nuts (such as walnuts, pistachios, and almonds), 1/4 cup of sugar, 1 teaspoon of ground cinnamon, and a pinch of salt. Mix well to make sure the nuts are evenly coated with the sugar and spices.
Take a sheet of phyllo pastry and cut it into small squares or rectangles, about 2x2 inches in size. Brush each piece with melted butter, then place a teaspoon of the nut filling in the center. Fold the pastry over the filling to create a little parcel, and press the edges lightly to seal. Repeat this process until you run out of pastry or filling.
Preheat your oven to 350°F (175°C). Place the mini Baklava bites on a baking sheet lined with parchment paper. Brush the tops with more melted butter for that extra golden touch. Bake in the preheated oven for about 15-20 minutes, or until the pastry is crisp and golden brown.
While the mini Baklava bites are still warm, drizzle them with a generous amount of honey. Let the bites cool completely before serving to allow the flavors to meld together. For an extra flourish, sprinkle some chopped nuts or a dusting of powdered sugar on top!
