In a large bowl, whisk together 2 cups of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and a pinch of salt. In a separate bowl, beat 2 eggs and add 1 3/4 cups of milk and 1/4 cup of melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix or your pancakes will turn out tough!
Heat a griddle or a large non-stick skillet over medium heat. Melt a little butter or grease with cooking spray to prevent sticking. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, then flip with a spatula and cook for another minute or so, until golden brown. Repeat until you have a stack of pancakes.
Once all the pancakes are cooked, it's time to stack 'em up! Start with the biggest pancake at the bottom, then add another on top, slightly off-center. Continue stacking and slightly offsetting each pancake until you've used them all. Now you have a tower of pancake goodness!
No pancake stack is complete without some sweet syrup! Pour your favorite syrup over the top of your pancake tower, letting it cascade down the sides. You can also add some fresh fruit, whipped cream, or chocolate chips for extra pizzazz. Go wild!
