In a mixing bowl, combine 1 ¼ cups of all-purpose flour, 1 tablespoon of sugar, and a pinch of salt. Cut in ½ cup of chilled butter until the mixture resembles coarse crumbs. Gradually add 2-3 tablespoons of ice water and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
In a separate bowl, mix together ½ cup of brown sugar, 1 tablespoon of melted butter, 1 egg, 1 teaspoon of vanilla extract, and a sprinkle of sea salt. Stir in ½ cup of chopped walnuts, ⅓ cup of shredded coconut, and ⅓ cup of mini chocolate chips. Set aside.
Preheat your oven to 350°F (175°C). Roll out the chilled tart dough on a lightly floured surface to about ⅛-inch thickness. Cut out circles of dough using a round cookie cutter or a glass. Press the circles into a muffin tin, gently shaping them to form tart shells.
Spoon about 1 tablespoon of the treasure filling into each tart shell. Bake in the preheated oven for 15-20 minutes until the tarts are golden brown and the filling is set. Allow them to cool slightly before gently removing from the muffin tin.
Once the tarts have cooled, dig into their sweet depths to reveal the hidden treasure buried within. Each bite will be a delightful surprise!
