Start by removing the green skin from the watermelon rind. Then, cut it into small, bite-sized pieces. You can be as creative as you want with the shape and size.
In a large bowl, combine 4 cups of water and 1/4 cup of salt. Stir until the salt is dissolved. Add the watermelon rind pieces to the brine and let them soak for about 2 hours. This will help remove any bitterness and prepare the rind for pickling.
In a saucepan, combine 2 cups of distilled white vinegar, 2 cups of water, 1 cup of sugar, and 1 tablespoon of pickling spices. Bring the mixture to a boil, stirring until the sugar is dissolved.
Using a slotted spoon, transfer the brined watermelon rind pieces into the pickling solution. Let them simmer in the solution for about 10 minutes, or until the rind becomes slightly translucent.
Remove the pickles from the heat and let them cool in the saucepan. Once cooled, transfer the pickles along with the pickling liquid into sterilized jars. Seal the jars and refrigerate them for at least 24 hours before enjoying.
