In a bowl, combine 1 ½ cups of crushed graham crackers, 1/4 cup of melted butter, and 2 tablespoons of honey. Mix until the crumbs are evenly coated. Press the mixture into tartlet pans, forming a thin, even crust on the bottom and along the sides.
Preheat your oven to 350°F (175°C). Place the tartlet pans on a baking sheet and bake the crusts for about 8-10 minutes, or until they turn golden brown. Once done, remove the pans from the oven and let the crusts cool completely.
In a mixing bowl, combine 1 cup of coconut cream, 1 tablespoon of turmeric powder, 1/4 cup of freshly squeezed lime juice, and 1/4 cup of honey. Whisk until the mixture is smooth and well combined.
Pour the filling mixture into the cooled tartlet crusts, dividing it evenly among them. Place the tartlets in the refrigerator and let them chill for at least 2 hours, or until the filling is set.
Once the tartlets are chilled, remove them from the refrigerator. Top each tartlet with some freshly sliced tropical fruits like mango, pineapple, and kiwi. You can also sprinkle some shredded coconut or drizzle a little lime zest over the top. Now they're ready to be served and enjoyed!
