Be sure to have some napkins handy, because these Tzatziki stuffed pita pockets can get messy (but oh so delicious!). Also, remember to exercise caution when using sharp knives or grating cucumbers.
In a bowl, combine 1 cup of Greek yogurt, 1 grated cucumber (squeeze out excess water), 2 minced garlic cloves, 1 tablespoon of lemon juice, 1 tablespoon of extra virgin olive oil, 1 tablespoon of chopped fresh dill, and salt and pepper to taste. Mix well until all the ingredients are combined.
Cut 2 tomatoes, 1 cucumber, and 1 red onion into thin slices. Crumble 1 cup of feta cheese. Tear up some fresh lettuce leaves. Optional: Add some sliced olives for an extra burst of flavor.
Preheat a non-stick pan over medium heat. Place the pita pockets in the pan and warm them for about 1 minute on each side, until they are softer and more pliable.
Spread a generous amount of Tzatziki sauce on the inside of each pita pocket. Stuff them with the sliced tomatoes, cucumbers, red onions, crumbled feta cheese, fresh lettuce leaves, and sliced olives if using. Be sure not to overstuff them!
