In a bowl, combine 2 pounds of boneless chicken breasts (cut into bite-sized pieces), 1/4 cup of olive oil, 1/4 cup of lemon juice, 2 cloves of minced garlic, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix well to ensure every piece of chicken is coated. Cover and let it marinate in the refrigerator for at least 2 hours or overnight for maximum flavor.
Preheat your grill to medium-high heat. While the grill is heating up, soak wooden skewers in water for about 30 minutes to prevent them from burning.
