Finely chop a cup of carrots, half a cup of shiitake mushrooms, half a cup of cabbage, and a quarter cup of spring onions. Mix them together in a bowl.
In a large mixing bowl, combine 2 cups of glutinous rice flour and a pinch of salt. Gradually add 1 cup of warm water while stirring until you have a smooth dough. Knead the dough for a few minutes until it becomes elastic.
Divide the dough into small balls, about 1 inch in diameter. Using a rolling pin, flatten each ball into a thin, round wrapper, around 3 inches in diameter. Dust the wrappers with a bit of flour to prevent sticking.
Place a spoonful of the vegetable filling in the center of each wrapper. Fold the wrapper in half to form a half-moon shape. Pinch and pleat the edges to seal the dumpling. Repeat until all the filling and wrappers are used.
Line a steamer basket with parchment paper or cabbage leaves to prevent sticking. Arrange the dumplings in the basket, ensuring they don't touch each other. Steam the dumplings over high heat for 10-12 minutes, or until the wrappers turn translucent and shiny.
Gently remove the steamed crystal dumplings from the steamer and transfer them to a serving plate. Serve hot with your favorite dipping sauce, such as soy sauce or a chili-garlic blend. Enjoy the delicate flavors and colorful presentation!
