In a mixing bowl, combine 1 cup of shredded coconut, 1/4 cup of coconut sugar, and 1/2 teaspoon of vanilla extract. Mix until well combined.
In a separate bowl, whisk together 2 cups of all-purpose flour, 2 tablespoons of coconut oil, 1/4 cup of coconut milk, and 1/4 teaspoon of salt. Knead the dough until it comes together and forms a smooth ball.
Take a small portion of the dough, about the size of a golf ball, and flatten it in your hand. Place a spoonful of the coconut filling in the center and fold the dough over to seal. Repeat with the remaining dough and filling.
Fill a steamer basket with water and bring it to a boil. Place the dumplings in the steamer, making sure they're not touching each other. Steam for about 15 minutes, or until the dumplings are cooked through and slightly translucent.
Serve the coconut dumplings warm, sprinkled with extra shredded coconut if desired. These delicious treats are perfect for dessert or a special tropical snack!
