Take note
Please note that these pancakes are so delicious, you may find yourself wanting to make them every morning. Also, be careful not to get lost in the tropical daydreams induced by the heavenly aroma!
In a blender, combine 1 ripe mango (peeled and pitted), 1 cup of coconut milk, 1 tablespoon of honey, and a squeeze of lime juice. Blend until smooth and creamy.
In a mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of baking powder, and a pinch of salt. Add the blended Mango Coconut Smoothie to the dry ingredients and mix until well combined. If the batter seems too thick, you can add a splash of coconut milk to thin it out.
Place a non-stick skillet or griddle over medium heat and let it preheat for a couple of minutes. You want the pan to be hot enough to cook the pancakes evenly.
Using a ladle or measuring cup, pour about 1/4 cup of the pancake batter onto the hot pan for each pancake. Cook for 2-3 minutes, or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
Stack your Mango Coconut Smoothie Pancakes on a plate and top them with extra mango slices, coconut flakes, and a drizzle of honey. Take a moment to appreciate the tropical flavors and dig in! Don't forget to snap a photo for your Instagram feed.
