In a large mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of sugar, 1 teaspoon of baking powder, and a pinch of salt. Whisk them together until well combined.
In a separate bowl, whisk together 1 cup of milk, 1 egg, and 2 tablespoons of melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can result in tough pancakes.
Heat a non-stick frying pan over medium heat. Take a ladleful of the pancake batter and pour it onto the pan in a zigzag motion to create the shape of a palm tree. The trunk should be thicker and wider at the bottom, tapering towards the top. Repeat to make as many palm trees as you like.
Place a small dollop of batter at the top of each palm tree to create the coconuts. Cook the pancakes for 2-3 minutes on each side, or until golden brown and cooked through. Flip them gently to preserve the shape of the palm trees.
Once the pancakes are cooked, remove them from the pan and place them on a plate. Take a few mint leaves and insert them into the top of each pancake, resembling palm leaves. Voila! Your palm tree pancakes are ready to be enjoyed.
