Brighten up your morning with our whimsical and colorful Circular Layered Rainbow Pancakes! A fun twist on a classic breakfast favorite.

Please note that this recipe requires some patience and careful pouring to achieve the perfect circular layers. Also, be aware that flipping the pancakes can be a bit tricky, so make sure to use a spatula and be gentle.
In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/4 cup of granulated sugar, and 1/2 teaspoon of salt. In a separate bowl, whisk together 2 cups of milk, 2 large eggs, and 2 tablespoons of melted butter. Slowly pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix!
Divide the pancake batter into six smaller bowls. Using food coloring, dye each bowl of batter a different color of the rainbow. Start with red, then orange, yellow, green, blue, and purple. Mix each color well until the desired hue is achieved.
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray. Take a small ladle or measuring cup and pour a small amount of the red batter onto the center of the skillet. Use the back of the ladle to gently spread the batter into a circular shape. Cook for about 1-2 minutes or until bubbles start to form on the surface. Carefully pour a small amount of the orange batter directly into the center of the red pancake, allowing it to spread naturally. Repeat this process with the remaining colors, layering them one by one, from yellow to green, blue, and finally purple. Cook each layer for 1-2 minutes or until bubbles form and the edges start to set.
Once you've layered all the colors, it's time to flip the pancake! Carefully slide a spatula under the pancake and quickly flip it over. Cook for an additional 1-2 minutes or until cooked through and lightly golden. Repeat the flipping process with the remaining pancakes.
Stack the cooked pancakes on a plate and top with your favorite pancake toppings like maple syrup, fresh berries, or whipped cream. Cut into the stack to reveal the beautiful circular layers and enjoy your picture-perfect rainbow pancakes!
