Be careful when handling hot pans and oil, and make sure to properly ventilate your kitchen due to the strong smell of kimchi.
In a large mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup of water, 1/2 cup of kimchi juice, and a pinch of salt. Stir until well combined.
Finely chop about 1 cup of kimchi and add it to the batter. You can also add additional ingredients like chopped scallions or shredded carrots for extra flavor and texture.
Place a non-stick frying pan over medium heat and add a drizzle of vegetable oil. Spread the oil evenly across the surface of the pan.
Once the pan is hot, pour a ladleful of the batter into the center of the pan. Use the back of the ladle to spread the batter into a thin, round shape. Cook for about 2-3 minutes on each side, or until golden brown.
Transfer the cooked kimchi pancakes to a plate and serve them hot. Enjoy them on their own or with a dipping sauce of your choice. Deliciousness has never been easier!
