Get a taste of Denmark with our simple and delightful recipe for Æbleskiver! These fluffy pancake balls are perfect for a brunch or snack.
Take note
Be careful when handling the hot pancake balls to avoid burning yourself. And remember, they're so delicious that they might disappear faster than you can make them!
In a medium bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of granulated sugar, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. In a separate bowl, whisk together 1 cup of buttermilk, 1/2 teaspoon of vanilla extract, and 1 large egg. Gradually add the wet ingredients to the dry ingredients and whisk until smooth.
Place the Æbleskiver pan on the stove over medium heat. Add a small amount of vegetable oil or melted butter to each well of the pan. Allow the pan to preheat for a few minutes until the oil or butter starts to sizzle.
Using a spoon or a squeeze bottle, carefully fill each well of the Æbleskiver pan about three-quarters full with the prepared batter. As the batter starts to cook and set around the edges, use a skewer or a knitting needle to gently flip each pancake ball onto its side. Continue rotating the pancakes balls until they're golden brown and cooked through, about 2-3 minutes.
Transfer the cooked Æbleskiver to a serving plate and dust them with powdered sugar. Serve them warm with your favorite fruit compote, jam, or syrup. Grab a fork, take a bite, and savor every fluffy and delicious moment!
