Brew a strong cup of coffee and add sugar to taste. Stir until the sugar is fully dissolved. Set aside to cool.
In a large mixing bowl, whisk together flour, sugar, baking powder, and salt. In a separate bowl, combine milk and instant coffee granules until dissolved. Add the coffee mixture, eggs, and melted butter to the dry ingredients. Stir until just combined. The batter should be slightly lumpy.
Heat a non-stick pan or griddle over medium heat. Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook for another minute or until golden brown. Remove from the pan and keep warm. Repeat with the remaining batter.
Place one pancake on a plate, drizzle with coffee syrup, and spread a thin layer of whipped cream on top. Repeat with the remaining pancakes, syrup, and cream, creating a stack.
Using a fine-mesh sieve, dust the top of the pancake stack with cocoa powder. Serve immediately and enjoy!
