In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and a pinch of salt. Create a well in the center and pour in 1 cup of milk, 1 large egg, and 1 tablespoon of melted butter. Stir until just combined.
Measure out 2 tablespoons of Cognac and add it to the pancake batter. Give it a good whisk to incorporate the boozy goodness.
In a small saucepan, melt 1/4 cup of butter over medium heat. Once melted, add 1/2 cup of brown sugar and cook until it begins to bubble and caramelize, stirring continuously. Be careful not to burn the caramel!
Preheat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of caramel onto the skillet and quickly swirl it into a spiral shape. Immediately ladle about 1/4 cup of pancake batter onto the caramel spiral, starting from the center and working your way outwards. Allow the pancake to cook until bubbles form on the surface, then carefully flip it over and cook until golden brown.
Carefully transfer the coiled caramel cognac pancake onto a plate, caramel side up. Repeat the process with the remaining batter and caramel. Serve with an extra drizzle of caramel on top and a dusting of powdered sugar. Dig in and savor the fluffy, boozy goodness!
