Rise and shine with fluffy 'Matcha Pancakes'! Lightly sweetened with a hint of green tea, a perfect weekend treat.
Take note
Please note that matcha powder can be quite strong, so if you're not a big fan of green tea flavors, you may want to reduce the amount. Also, don't forget to preheat your griddle or pan before cooking the pancakes to ensure they cook evenly.
In order to make these delectable Matcha Pancakes, you will need: 1 cup all-purpose flour, 2 tablespoons sugar, 2 teaspoons matcha powder, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 3/4 cup buttermilk, 1/4 cup milk, 1 large egg, and 2 tablespoons melted butter.
In a medium-sized mixing bowl, whisk together the all-purpose flour, sugar, matcha powder, baking powder, baking soda, and salt. Make sure to sift the matcha powder to ensure there are no lumps.
In a separate small bowl, whisk together the buttermilk, milk, egg, and melted butter until well combined.
Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together until just combined. Be careful not to overmix, as this can result in tough pancakes.
Preheat a griddle or non-stick pan over medium heat. Lightly grease the cooking surface with butter or cooking spray.
Using a 1/4 cup measuring cup, pour the pancake batter onto the griddle or pan. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
Stack your beautiful green Matcha Pancakes on a plate and top with your favorite toppings. A drizzle of maple syrup, a dollop of whipped cream, or some fresh berries are all excellent choices. Get creative and enjoy!
