In a large bowl, combine 1 ½ cups of pancake mix, 1 cup of milk, and 1 tablespoon of melted butter. Stir until the batter is smooth and lump-free.
Preheat your oven to 375°F (190°C). Grease a muffin pan with cooking spray or line it with paper liners for easy cleanup.
Fill each muffin cup about halfway with the pancake batter. This will leave enough space for the palm tree decoration.
To make the palm tree trunks, use 5 pretzel sticks for each muffin. Gently press 5 pretzel sticks into the pancake batter in a cone-like shape, making sure they stand upright.
Cut several green grapes in half lengthwise. Arrange the grape halves at the top of the pretzel sticks to create palm leaves. You can also use small pieces of green apple or kiwi if you prefer.
