Before we start slicing, gather all the ingredients needed for a delicious Rainbow Sushi Roll. You will need sushi rice, nori seaweed sheets, cucumber, avocado, carrot, bell peppers (red, orange, yellow, green), and some cooked shrimp or crab meat if you desire. Don't forget your sushi mat, sharp knife, and a bowl of water for rice handling!
Wash and peel the cucumber, carrot, and bell peppers. Make sure to remove any seeds or tough parts. Slice the cucumber and bell peppers into thin matchstick-like strips. Cut the avocado in half, remove the pit, and then slice the flesh into thin strips as well. Finally, thinly slice the carrot using a sharp knife or a mandoline slicer.
Follow the instructions on your sushi rice package to cook the rice perfectly. Once cooked, transfer the rice to a wooden or non-metallic bowl. Season the rice with a mixture of rice vinegar, sugar, and a pinch of salt. Gently mix the rice with a spatula or rice paddle to evenly distribute the seasoning.
Cover the sushi mat with a sheet of plastic wrap. This will prevent the rice from sticking to the mat and make the rolling process easier. Keep a bowl of water nearby to wet your hands and prevent the rice from sticking to your fingers.
Place a sheet of nori seaweed on the prepared sushi mat. Wet your hands with water, then take a handful of sushi rice and spread it evenly over the nori sheet, leaving a small margin at the top edge.
Now comes the fun part! Arrange the strips of cucumber, avocado, bell peppers, carrot, and cooked shrimp or crab meat (if using) in a line across the center of the rice-covered nori sheet. Be creative and make your rainbow as colorful as possible!
Starting from the bottom edge, carefully roll the sushi mat, applying gentle pressure to create a tight and compact roll. Once rolled, use a sharp knife to slice the roll into bite-sized pieces. Dip the knife into water before each cut to prevent sticking. Serve your beautiful Rainbow Sushi Rolls with soy sauce, pickled ginger, and wasabi. Enjoy!
