Take note
Be careful when handling hot caramel as it can cause burns. Make sure to supervise young children while making this recipe. And remember, once you start munching on this popcorn, it's hard to stop!
Pop 8 cups of popcorn according to the instructions on the packet. You can use microwave popcorn or pop it the old-fashioned way using a pot on the stove. Just make sure all the kernels are popped and set the popcorn aside in a large bowl.
In a medium saucepan, melt 1 cup of unsalted butter over medium heat. Once the butter is melted, add 2 cups of granulated sugar and 1/2 cup of light corn syrup. Stir everything together until it's well combined.
Carefully add 1/2 teaspoon of salt and 1 teaspoon of pure vanilla extract to the saucepan. Stir everything together and let the mixture come to a boil. Continue cooking for 4-5 minutes, stirring constantly, until the caramel reaches 300°F (150°C) on a candy thermometer.
Immediately pour the hot caramel over the popcorn. It's time to get your hands dirty (but be careful, it's hot!). Using a rubber spatula or wooden spoon, gently toss the popcorn and caramel together until every kernel is coated. Don't be too rough, or you'll crush the popcorn.
Spread the caramel-coated popcorn onto a parchment-lined baking sheet, making sure it's in a single layer. Let it cool completely at room temperature. Once it's cooled, break the popcorn into smaller pieces and serve it in a bowl or cute individual bags. Now sit back, relax, and savor every sweet, crunchy bite!
