Take note
Be sure to supervise children around the blender and use caution when handling sharp knives.
Peel and chop 3 large carrots into small chunks. The size doesn't have to be perfect, but aim for uniformity to ensure even cooking and blending.
Place the carrot chunks in a pot and cover them with water. Bring the water to a boil and let the carrots cook until they are soft and easily pierced with a fork. This usually takes about 10-15 minutes.
Once the carrots are tender, drain them and rinse them under cold water to stop the cooking process. Allow them to cool completely before proceeding to the next step.
In a blender, combine the cooked carrots with 1 cup of freshly squeezed orange juice. Blend until smooth and creamy. If needed, you can add a bit of water or more orange juice to achieve the desired consistency.
Add 1/4 cup of honey or maple syrup to the carrot and orange mixture. Blend again to incorporate the sweetener. Then, cover the mixture and refrigerate it for at least 2 hours to chill and allow the flavors to meld together.
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-30 minutes until the sorbet is thick and frozen.
Scoop the coral-colored sorbet into bowls or cones, and watch your kids' eyes light up! It's a healthy and refreshing dessert that will make them smile. Feel free to top it with some fresh mint leaves or orange zest for an extra burst of flavor!
