Using a sharp knife, carefully cut away the green skin from the watermelon rind. Cut the rind into small, 1-inch cubes.
Bring a pot of water to a boil and add the watermelon rind cubes. Boil for 2 minutes to soften the rind. Drain and rinse with cold water.
In a saucepan, combine 1 cup of water and 1 cup of sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Let the syrup cool.
Place the blanched watermelon rind cubes in a blender and add the cooled simple syrup. Blend until smooth. Strain the mixture through a fine-mesh sieve to remove any remaining solids.
Pour the strained mixture into a shallow dish and cover with plastic wrap. Chill in the refrigerator for at least 2 hours or until completely cold. Transfer the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions.
Once the sorbet reaches a soft-serve consistency, transfer it to a lidded container and place it in the freezer for 2-3 hours or until firm. Serve in your favorite dessert bowls and enjoy the refreshing Watermelon Rind Sorbet!
