Using a sharp knife, carefully trim away the green skin from the watermelon rinds. Cut the rinds into desired spear shapes. You can trim off any remaining pink flesh, but leave a thin layer for added flavor.
In a large pot, combine water, vinegar, sugar, salt, and your favorite pickling spices. Bring the brine to a boil, stirring occasionally until the sugar and salt are completely dissolved. Remove the pot from heat and let it cool slightly.
Carefully place the watermelon rind spears into sterilized jars, leaving a bit of headspace. Pour the brine over the rinds, ensuring they are fully submerged. You can add some thinly sliced onions or garlic cloves for extra flavor if desired.
Seal the jars tightly and refrigerate them for at least 24 hours to allow the flavors to meld together. The longer you let them pickle, the more flavorful they'll become. You can start enjoying them after 24 hours, but they'll be even better after a few days!
