Cut a small seedless watermelon in half. Using a sharp knife, carefully slice the flesh away from the rind. Then, scoop out the watermelon flesh and transfer it to a blender.
Add 2 cups of watermelon flesh to the blender. Blend on high speed until the watermelon is completely pureed and smooth.
Pour in the juice of 2 fresh limes and add 2 tablespoons of simple syrup or agave nectar. Blend again to combine all the flavors.
Take a lime wedge and run it along the rim of each glass. Dip the rims into a plate of salt or Tajin seasoning for a flavorful twist. Fill each glass with ice cubes.
Carefully pour the watermelon mixture into each salt-rimmed glass. Give it a gentle stir. If desired, garnish with a fresh watermelon wedge or a slice of lime. Cheers!
