Cook the quinoa

Rinse 1 cup of quinoa thoroughly under cold water. In a saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, until all the water is absorbed. Fluff with a fork and let it cool.
