In a medium-sized saucepan, bring 1 cup of water, 1/2 cup unsalted butter, 1 teaspoon sugar, and a pinch of salt to a boil over medium heat. Once the butter has melted, remove the saucepan from the heat and add 1 cup of all-purpose flour. Stir vigorously until the mixture forms a ball of dough. Return the saucepan to low heat and continue stirring for about 2 minutes to cook the flour. Transfer the dough to a mixing bowl and let it cool for 5 minutes.
Add 4 large eggs, one at a time, to the cooled dough. Stir well after each addition until the dough becomes smooth and glossy. The dough should be thick enough to hold its shape, but still easy to pipe.
To infuse the dough with lavender and honey, add 2 tablespoons of culinary lavender and 1/4 cup of honey to the dough. Mix well until the lavender and honey are evenly distributed throughout the dough.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Transfer the dough to a piping bag fitted with a large round tip. Pipe long, straight lines of dough onto the baking sheet, leaving about 2 inches of space between each eclair. Bake for 20-25 minutes, or until the eclairs are puffed up and golden brown. Then, reduce the oven temperature to 350°F (180°C) and bake for an additional 10 minutes to dry out the centers of the eclairs.
Remove the eclairs from the oven and let them cool completely on a wire rack. Once cooled, slice each eclair in half horizontally. Fill the bottom halves with your favorite pastry cream or whipped cream. Place the top halves back on the filled bottoms.
To add an extra touch of sweetness, drizzle each filled eclair with a little extra honey. The honey will not only enhance the flavor but also create a beautiful glossy finish.
